Ingredients

  • 1/2 envelope Taco seasoning
  • 1/2 pound Extra lean ground beef
  • 3/4 cup cottage cheese
  • 1 whole egg
  • 1/2 cup Diced tomatoes
  • 1/2 cup Chopped onion
  • 1/2 cup Chopped green peppers
  • 1/2 cup Grated cheese

Directions

In frying pan cook ground beef completely browned, add the taco seasoning according to the directions on the package. Add onions and green peppers in with beef, simmer until most of the liquid is gone. Preheat oven to 400°F. In blender add cottage cheese and eggs and blend together. In casserole dish spread the ground beef evenly over the bottom of the dish. Pour half of the cottage cheese mixture over the group beef. On top of this spread out all tomatoes evenly. Cover with the rest of the cottage cheese mixture. Bake for 25 min. Add grated cheese and broil for 5 min. and serve.
